Combine all ingredients (except the chicken) in a roasting tray. Add the chicken and turn to coat. Cover and chill in the fridge to marinate overnight.
Preheat the oven to 200C, gas mark 6.
Push the olives, garlic and lemon under the chicken to prevent them burning. Roast, uncovered for 45 -55 minutes until thoroughly cooked and there's no pink meat. Serve immediately. (instructions on how to spatchcock a bird can be found at www.waitrose.com)
